The function of vitamin A is to form and maintain healthy teeth and skeletal muscles such as skin, lungs, intestines, among others. Vitamin A helps to boost the immune system by supporting the production growth and distribution of cytotoxic T cells (Huang et al., 2018). These cells play a major role in immune response and improves the functionality of the body against pathogens. It also contains retinol which improves the eyesight. The active form of vitamin A, retinol, combines with opsin to form a molecule that improves the perception of color and low light vision. Vitamin A is found in the diet naturally or can be taken as supplements. There are two forms of vitamin A in food: preformed vitamin A and provitamin A carotenoids. The main source of preformed vitamin A are animal products like dairy, fish, and liver. The main food source of provitamin a carotenoid are plant products such as carrots, sweet potato, pumpkin, among others. A deficiency in Vitamin A is can result in blindness. Excess intake of vitamin A can result in yellowing of the skin due to the orange color of beta carotene found in Vitamin A food sources. Since vitamin A is fat soluble, excess vitamins will be stored in the body tissues.

It is important for people to understand this message because many people, especially in developing countries are suffering from eye problems and poor immune system. There are various sources of vitamin A however, carrots are the cheapest form (Zinder et al., 2019). Carrots are easy to implement in a diet and do not require long preparation process. Also, it is easy to be creative when serving carrots, for example, by serving them grated, as carrot sticks or boiling them. This message aims at creating awareness of the role of carrots in the diet.
